La torta de fruta (Cake fruit) es originaria de Gales (Reino Unido) y llegó a Latinoamérica a través de Argentina en 1865 con el arribo de migrantes provenientes de este lugar. Desde allí se extendió por diferentes países y cada uno le ha dado su toque característico.

En Colombia es muy común que haga parte de los postres navideños, aunque es más popular entre las personas mayores debido a la cantidad de fruta deshidratada y nueces que se le agrega.

Estando lejos de mi familia, es una receta que me hace sentir cerca de ellos, ya que es una de las preparaciones que mas disfrutaban cuando regresaba a casa para navidad.

Un abrazo gigante

Ingredientes

  • 162 gramos de harina todo propósito
  • 6 gramos de cocoa en polvo
  • 5 gramos de polvo de hornear
  • 1 gramo de bicarbonato
  • 1 cucharita de canela en polvo
  • Una pizca de sal
  • Nuez moscada molida
  • 20 gramos de naranja confitada cortada en cubitos
  • 32 gramos de higos deshidratados
  • 32 gramos de ciruelas pasas
  • 32 gramos de pasas
  • 32 gramos de arándanos deshidratados
  • 50 gramos de nueces
  • 85 gramos de panela pulverizada
  • 219 gramos de leche vegetal
  • 6 gramos de vinagre de manzana
  • 4 gramos de extracto de vainilla
  • 58 gramos de aceite (Recomendado canola)
  • 200 gramos de vino tinto para remojar la torta

Pasos

  1. Comienza precalentando el horno a 170ºC o 338ºF.
  2. Engrasa un molde redondo de 15 cm con un poquito de aceite y cocoa hasta cubrir todas las paredes.
  3. Ahora en un bowl agrega la harina, la cocoa, el polvo de hornear, el bicarbonato, una pizca de sal, la canela en polvo y un poquito de nuez moscada molida.
  4. Mezcla para integrar bien los ingredientes secos.
  5. Añade la cáscara de naranja confitada, los higos deshidratados, las ciruelas pasas, las pasas, los arándanos y las nueces (Idealmente finamente picados).
  6. Mezcla con los ingredientes secos, para enharinar la superficie de la fruta y así prevenir que se vaya al fondo del molde durante el horneado.
  7. Este paso es opcional, pero lo mejor es separar los trozos grandes de fruta con la mano, para que queden mejor distribuidos en la mezcla.
  8. En otro bowl agrega la panela molida, la leche vegetal, el vinagre, el extracto de vainilla y el aceite.
  9. Mezcla para integrar lo mejor que puedas la panela molida.
  10. Tamiza los ingredientes secos y comienza a incorporar.
  11. Agrega en este momento las nueces y la fruta deshidratada. Termina de integrar, lo mejor es hacerlo con una espátula.
  12. Lleva la mezcla al molde previamente engrasado y lo múevelo ligeramente para tratar que la superficie quede un poco mas lisa.
  13. Mete a hornear a 170ºC. Tardará aproximadamente 35 minutos en el horno.
  14. Comprueba con un cuchillo que esté completamente horneada y saca del horno.
  15. Lleva una rejilla y comienza a añadirle 200 gramos de vino tinto mientras está caliente, de esta forma lo absorberá mas fácil.
  16. Cuando se haya enfriado, desmolda y cubre el molde con vinipel.
  17. Vuelve a introducir la torta, la tápala y déjala en nevera por 3 días para que se evapore el alcohol. Esta espera te dará un resultado increíble.

Ingredients

  • 162 grams of all purpose flour
  • 6 grams of cocoa powder
  • 5 grams of baking powder
  • 1 gram of bicarbonate
  • 1 teaspoon ground cinnamon
  • a pinch of salt
  • Ground nutmeg
  • 20 grams of candied orange cut into cubes
  • 32 grams of dehydrated figs
  • 32 grams of prunes
  • 32 grams of raisins
  • 32 grams of dehydrated cranberries
  • 50 grams of nuts of your choice (This recipe has almonds and cashews)
  • 85 grams of grated raw unrefined cane sugar
  • 219 grams of non-dairy milk
  • 6 grams of apple cider vinegar
  • 4 grams of vanilla extract
  • 58 grams of vegetable oil (Canola or grapeseed)
  • 200 grams of dry red wine to soak the cake

Steps

  1. Start by preheating the oven to 170ºC or 338ºF.
  2. Grease a 15 cm round mold with oil and cocoa until all the walls are covered.
  3. Now in a bowl add the flour, cocoa, baking powder, bicarbonate, a pinch of salt, ground cinnamon and a little ground nutmeg.
  4. Mix to integrate the dry ingredients well.
  5. Add the candied orange peel, dried figs, prunes, raisins, cranberries and nuts (ideally finely chopped).
  6. Mix with the dry ingredients, to flour the surface of the fruit and prevent it from going to the bottom of the pan during baking.
  7. This step is optional, but it is best to separate large pieces of fruit by hand, so that they are better distributed in the mixture.
  8. In another bowl add the grated raw unrefined cane sugar, the vegetable milk, the vinegar, the vanilla extract and the oil.
  9. Mix to integrate the grated raw unrefined cane sugar as best you can.
  10. Sift the dry ingredients and begin to incorporate.
  11. Add the nuts and dried fruit at this time. Finish integrating, it is best to do it with a spatula.
  12. Take the mixture to the previously greased mold and move it slightly to try to make the surface a little smoother.
  13. Bake at 170ºC. It will take approximately 35 minutes in the oven.
  14. Check with a knife that it is completely baked and remove from the oven.
  15. Take a rack and start adding 200 grams of red wine while it is hot, this way it will absorb it easier.
  16. When it has cooled, unmold and cover the mold with vinipel.
  17. Put the cake back in, cover it and leave it in the fridge for 3 days to allow the alcohol to evaporate. This wait will give you an incredible result.
